Sourcing the Best Agaves

Our tequila’s journey starts with the work of skilled jimadores, agave farmers local to the Tequila region. They identify agaves located in the Los Valles region of Tequila, finding optimal conditions for 818 by waiting for at least 7 years for the agaves to reach peak maturity.

Slow Cooking

Next, we cook our carefully-selected agaves for 30+ hours. Large stone Tahonas are then used to extract and collect the juice by crushing the cooked agaves, a technique that has been around for centuries.

Traditional Tahona Extraction

We then crush our cooked agaves with motorized stone Tahona pits - each wheel weighs 800 kilograms, and enables the best juice extraction and collection. This technique has been used for centuries in tequila production, and is the most traditional method.

Natural Fermentation

Our extracted juice, called “mosto,” is fermented in unique wood and stainless steel tanks for around 48hrs, using leftover agave fibers from our tahonas, inoculated with native yeast for a deeper aromatic expression. 

Copper Distillation

Our tequila is then distilled in hand-built copper alembic pot stills of the highest quality. We distill our tequila twice: first to 24% alcohol volume, and then to 48% alcohol volume, using precise cuts for maximum 818 smoothness.

Aged in Superior Oak

From distillation, our tequila then finds the barrels - our Reposado and Añejo tequilas are aged in both American and French oak at still strength. Our team expertly blends our tequilas for the iconic 818 taste we love: smooth, versatile, and sippable.

  • Ingredients:
  • 2.0 OZ 818 Tequila Añejo
  • + Oloroso Sherry (For Rinse)
  • + Orange Peels
  • Prep:
  • (1) Rinse a chilled coupe with Oloroso sherry, flame an orange twist over the glass.
  • (2) Stir 818 Añejo with ice until chilled.
  • (3) Strain and flame an orange peel over the top of the glass.
  • (4) Garnish with orange peel.

  • Ingredients:
  • 1.5 OZ 818 Tequila Blanco
  • 5.0 OZ Fever-Tree Sparkling Sicilian Lemonade
  • + Mint Leaves
  • + Lemon
  • Prep:
  • (1) Muddle mint at the bottom of a highball glass.
  • (2) Add a generous scoop of ice to the glass.

  • Ingredients:
  • 1.5 OZ 818 Tequila Blanco
  • 1.0 OZ Strawberry Purée
  • 0.5 OZ Fresh Lime Juice
  • 0.5 OZ Agave Syrup (50% Agave Nectar, 50% Water)
  • + Fresh Strawberries
  • + Fresh Mint
  • Prep:
  • (1) Put all ingredients into a shaker and shake with ice.
  • (2) Strain into a glass and serve over fresh ice.
